Carribean Summer Salad

 Happy Cinco de Mayo! Here is a little salad recipe....
We have made this salad a few times and really loved it! So here it is.

Caribbean Summer Salad:


4 cups torn romaine lettuce   (in the photo I used mixed greens- Romaine is much better- it doesn't get soggy - if you mix the dressing in- use romaine lettuce!)
 3 cups cut-up cooked chicken
 1 can (15 oz)  black beans, drained, rinsed
1 1/2  cups chopped tomatoes
2 ripe medium mangoes, seed removed, peeled and chopped
Dressing
1/3 cup vegetable or canola oil
1/3 cup lime juice -fresh is best but the other kind is fine too
1/4 cup chopped fresh cilantro
2 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon ground cinnamon, if desired
2 cloves garlic, finely chopped
