Very Strawberry Cake



Anyone who knows me, knows I love strawberry everything. Because I had a raincheck for a deal on strawberries, I bought a ton this week. They ended up not being the best crop-being that the strawberry season is basically over- What to do w/ them?? Make a cake. I don't know what has gotten into me- I use to really dislike cake-but not anymore!Here is a recipe for a very strawberry cake!

Very Strawberry Cake

1 pkg. white or yellow cake mix

1 pkg. sugar free strawberry jello (or you can use a 3 oz. pkg. of the sugar kind)

1/3 cup applesauce

1/3 cup canola oil

4 eggs

3 or 4 tbsp. flour

4 oz. fresh or frozen stawberries + ones to put on top if you wish

1/4 cup vanilla fat free yogurt (or low fat)

1/4 cup fat free sour cream (or regular)

If your strawberries are frozen, thaw and drain. Preheat oven to 350 degrees F. Lightly grease 9 by13 inch cake pan. (I used a glass pan). Combine all ingredients and mix until just combined. Pour into prepared pan. Bake at 350 for 25-35 minutes. When toothpick comes out clean it is done.

FROSTING: combine 1 8 oz. container cool whip and 1 small pkg. vanilla pudding. Spread on cake. Top w/ sliced strawberries. Refridgerate any leftovers! Enjoy!

That sounds tsty. I used the rest of my strawberries the other day in a trifle. It was good too.
