Mini Skinny Muffins
(adapted from the Applesauce Bread recipe on the back of the Fry's Dark Brown Sugar)
1 egg plus 2 egg whites
2 cups applesauce (no sugar added)
2 cups all bran or raisin bran cereal (if you don't use raisin bran, add 3/4 cupe raisins)
2 1/2 cups flour
2 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon (I add more)
1 tsp. nutmeg (I add a little bit more)
1/4 canola oil
1 cup dark brown sugar, firmly packed
1/2 cup chopped nuts, optional
Preheat oven to 350. Combine:eggs and whites, applesauce, bran cereal. Let stand 10 min. In a separate large bowl, combine flour, baking powder, salt, baking soda, and spices. Add canola oil and brown sugar to the FIRST mixture. Add nuts and raisans to first mixture also. Combine the 2 mixtures together. Mix well until moist. Spray a small muffin tin w/ Pam spray. Scoop into muffin tin. Bake for 10 minutes at 350. Let cool in pan until warm. TEST after 10 min. to make sure they are done. We made these in a gas oven, which seems to cook faster than the electric oven we are use to using.
