Peanut Butter Chocolate Bars

I know, I know, I post about the Biggest Loser and Exercise and then I post a really fattening recipe! So as far as weight-loss, these don't aid in that goal at all. These are so amazing- I can't believe I haven't made these before. Tonight after dinner, I pulled out one of my cookbooks, that was actually a wedding gift, The Essential Mormon Cookbook, by Julie Badger Jensen. Let's just say you don't have to be "mormon" to use this cookbook. It has tons of easy recipes organized by season-a totally fun little cookbook. So we found a recipe for something we could make that was super easy. I cut the recipe in 1/2 because I knew we would eat way too many of these- and the extra pounds would not be pretty.

Here is the recipe just how I made them.

Peanut Butter Chocolate Bars

source: The Essential Mormon Cookbook

6 whole graham crackers

1/2 cup margarine (or butter)

1/2 cup peanut butter

1 3/4 cups powdered sugar

1/2 package chocolate chips

a few spoonfuls of milk

Combine graham crackers crumbs, (I use the food processor), margarine (softened),peanut butter, and powdered sugar in a large bowl. Mix well. Pat into a lightly greased 8 by 8 glass pan. Melt the chocolate chips with a few spoonfuls of milk in the microwave stirring every 20-30 seconds. When melted, spread on top of peanut butter mixture. Chill in freezer or refridgerator until hard. When done, cut into squares and enjoy.

Oh my gosh, these look good! They remind me of the ones I'd go looking for at school (although sometimes theirs were dry and not that great). I'm sure these are SO much better!

Are these as good as school lunch ones? They are the best.

Jessica I think these are BETTER than those old peanut butter fingers from school lunch. I think these are way too good to make because - if you are like me - you could literally eat the entire pan. These are really really good!
